Recipe: Italian Zucchini Hotdish

Dan got me this cookbook for my birthday last week.  It's not a vegetarian cookbook but it does have a lot of vegetarian recipes in it and many of these recipes can easily be turned into one. I thought I'd share a few recipes with you as I make them.

This recipe is actually called a "casserole" but I am from Minnesota and we don't have casserole here. We have HOTDISH. I made this recipe a few days ago. It was super easy to make and quick. I whipped it up while Isaac was sleeping so that all I had to do was turn the oven on and stick it in. It had lots of flavor. I even had seconds and Dan had leftovers. I love zucchini though and cooked tomatoes. But don't tell Dan. He still thinks I hate tomatoes. But... I am not a fan of them raw. I mean I'll eat them... but not a fan. This recipe is one I think I'll make again. 



Ingredients 
3 zucchini sliced
3 tablespoons olive oil
1 onion, diced
2 garlic cloves, minced
28 oz can of diced tomatoes
1 teaspoon of basil 
1 1/2 teaspoons of oregano
1/2 teaspoon of garlic powder
1/4 teaspoon of pepper
1 1/2 cups of stuffing mix, any kind
1/2 cup grated parmesan cheese
3/4 cup of mozzarella

Directions
1. Cook zucchini in 2 tablespoons of olive oil until tender, about 5-6 minutes. Set aside in another dish.
2. Using same pan place 1 tablespoon of olive oil in pan and cook garlic and onions for one minute. Then add remaining ingredients. Simmer, uncovered for ten minutes. Remove from heat and add in cooked zucchini.
3. Place in ungreased 13"X 9" baking dish and top with stuffing mix. Sprinkle with parmesan cheese. Cover and cook at 350 degrees for 20 minutes. Then uncover, sprinkle with mozzarella cheese and bake other 10 minutes. 

Yesterday it was a pretty gloomy day. It rained in the morning and was cloudy the rest of the day. So we all kind sat around. Well I should say the boys lounged around. I cleaned the bathroom and kitchen then I relaxed. Isaac enjoyed lounging in his sweats. 


Mommy.... sign me up for boxing classes. STAT!

    Also - haven't had a chance to email you back about my hair but yes - I LOVE IT!!! It's much much MUCH easier to style, and my husband got on board when he saw how sassy it was, and how great it made me feel! :) GO FOR IT!!!!
