I've had this recipe bookmarked for weeks. I finally got around to making it yesterday. It was super easy to make. Dan helped by peeling the tomatoes. He boiled a bunch of water and put the tomatoes in the water for about 30 seconds. This causes the skin to easily come off. The rest was even easier. I chopped everything up and threw it in with the lentils. It smelled amazing and I was certain it would taste great too!
Ingredients:
1 cups of lentils
1 quart of water
1 cube of vegetable bouillon
3 medium tomatoes, peeled and diced
1 large onion, diced
1 carrot, sliced
1 medium apple-peeled, cored and diced
1/2 cup frozen peas
1 large clove garlic, minced
1 tablespoon olive oil
1/4 cup barbecue sauce
1/2 teaspoon paprika
salt and pepper to taste
Directions
1. Place the lentils and water in a large pot and mix in vegetable bouillon. Bring to boil, reduce heat to boil and simmer for 20 minutes.
2. Stir in tomatoes, onion, carrots, apples, peas, garlic, oil, paprika, BBQ sauce, salt and pepper. Continue to simmer for 20 minutes. Then serve.
I really enjoyed this recipe. It had lots of flavor and tasted amazing. I am pretty excited too because there are plenty of leftovers for me to take for my lunches this week! Dan thought it was rather sweet (this was because of the apples). I will admit when I saw that apples were in this recipe I thought it was kinda strange. I always loved stew as a kid and I am glad to have found a recipe that is tasty. For my vegan readers I'd like you to know this is a recipe for you too!
While I was making this recipe I asked Dan what we should feed Isaac. While I have dabbled in making my own baby food he also gets store bought stuff sometimes too. Anyways, Dan suggested that we puree up some of this recipe and have him give it at try. I double checked the ingredients in the BBQ and all was good so I decided it was a good suggestion. I threw some in the blender put it in a bowl for him. Unfortunately Isaac was not a fan. But he is not used to having a meal like this. He took a few bites and decided he was done. He may not have been very hungry. We tried giving him something else and he didn't want to eat that either. Enjoy the photos of Isaac trying the stew! Yum!

Is Isaac a vegetarian? We fed Charlotte meat for the first time today (store bought puree, I'm not quite brave enough to puree my own meat). I'm just curious since I was sort of hesitant to start on meat products and I'm always tempted to go more vegetarian.
ReplyDeleteHe hasn't had meat yet. I really haven't decided if I want him to have it or not. If I do i'd rather it be organic and "free range"
