Recipe: White Bean Bulgur Salad

I have learned something from using up the foods in the pantry... I really like love bulgur. It's definitely something that will make an appearance in my pantry again. Bulgur is a whole wheat grain. It's high in fiber and also has some protein in it too. It's tasty and easy to make.  I hate to say it but.... it might top my love for quinoa. *gasp*

I found this recipe online just like I do for most of my recipes. Super easy to make and it makes for a nice side dish for a party or gathering. This recipes makes A TON of salad but it's tasty. I made the salad almost two weeks ago and we still have some left. Don't worry... it's still good. This is one Dan has even had more than once and he's not a huge fan of leftovers. The only thing I'd change is to make/add more dressing. The bulgur really soaked up the dressing and I think it needed a bit more. 

Ingredients 

Salad
2 cups of bulgur wheat with four cups of boiling water
3 cans of white beans
1.5 cups of chopped celery
1.5 cups of red onion
3/4 cup of fresh parsley

Dressing
1/2 cups plus 1 tablespoon of white wine vinegar or lemon juice
2 tablespoons of olive oil
3 tablespoons of mustard
1 tablespoon sugar 
1 garlic clove
3/4 teaspoon of ground cumin
1/4 teaspoon of pepper 

Directions
1. Place bulgur in bowl. Add boiling water and let sit for 30 minutes. 
2. Combine beans, onion, celery and parsley in another bowl. 
3. Combine dressing ingredients and stir or shake. Add bulgur and shake/stir evenly. 
4.  Cover and place in refrigerator for at least 2 hours before serving.

  2. I have to try this! We love bulgur too! We have a similar recipe that has chickpeas and a bit of a spicy kick to it... it tastes so good in the summer!
