Recipe: Tomato-Curry Lentil Stew

I love lentils. I mean I really like them. I am not sure why I don't cook with them more.  I found this recipe online at allrecipes.com and knew it was one I wanted to try.  It was easy to make! You cut up some onions and celery. Mince some garlic (or use a garlic press like me) and throw everything into a pot of boiling lentils and BAM! Dinner is ready in about an hour.



Ingredients

1/2 cup of lentils
1 cups water
1 small onion
3 stalks of celery
1 15 oz can of strewed tomatoes
4 garlic cloves
1/4 teaspoon curry powder

Directions:

1. Bring water and lentils to a boil. Then simmer.
2. Add onions, celery, and tomatoes. Cook total of 45-60 min. Add spices after about 30 minutes or so.

Yum! So very good! Great flavor! Yep. This is one to make again. Prep time took about 5-10 minutes. Then all I add to do was mix all the ingredients together. Very easy especially when you've got a cute baby crying for your attention.

I will end with an Isaac photo. I tried out the stroller without the carseat. He did okay. He got fussy about half way through the walk but I think he was hungry. You might be wondering why Isaac is wearing a bib. Lots of his photos include a bib these days. This is because he is drooling LIKE CRAZY!  We went through two bibs today.
