Recipe: Southwest Sweet Potato Chickpea Delight


Yep. Another VegWeb recipe.



Ingredients:

1 large sweet potato, peeled and diced
1 16 oz jar of salsa (Your choice)
1 15 oz can of chickpeas drained and rinsed
1 1/2 cups tortilla chips, crushed
1 medium onion, diced
3 cloves of garlic
1 cup of cheese
1 tablespoon of chili powder
1 teaspoon crushed red pepper
1 teaspoon ground cumin
1 teaspoon dried oregano

Directions:

1. Preheat over to 350 degrees.
2. Combine all the ingredients into a bowl. Set a small amount of cheese. Spread mixture into a shallow casserole dish. Cover with foil and bake for 45 minutes.
3. Take out of over and remove foil. Stir and sprinkle with remaining cheese. Bake uncovered for another 15-20 minutes. Make sure the potatoes are cooked all the way through.

Yum! Yum! Yum! Such flavor and so so so good!  I didn't have Isaac try this one. He had just nursed about 30 minutes before eating and he didn't seem hungry. This is definitely one I will make again. It can be made into a vegan recipe if you use vegan cheese instead. I had considered this but I don't think Hubby would have been onboard.  Want to know what I loved about this recipe....besides how awesome it tasted of course.... I loved that it was super easy to make!

Isaac enjoyed sitting in the kitchen with me while I cooked.

  1. Jana I'm making this tomorrow night for dinner. I already prepped the ingredients because I'm going to try to make it in my slow cooker instead of the oven, so I can start it at lunch time. I'll let you know how it goes!
