My sister, who happens to be vegan, shared this really awesome website with me. It's called vegweb.com. It seriously so many different recipes both vegan and vegetarian! It's awesome! I found this recipe by browsing the bean section. The recipe was super easy to make and didn't require a lot of time. This working mommy loves that!
Ingredients:
Olive oil
1 onion, diced
1 8 ounce can of tomato paste
1 or 2 14 ounce can of vegetables (You choose. I used green beans and peas)
2 tablespoons curry
2 cups of cooked chickpeas or lentils (I used one cup of each)
1 cup of water
1 cup cooked brown rice (I used two)
Directions
1. Saute onions in olive oil. Add everything but the rice. Stir and simmer for about 20 minutes.
2. Top with cooked rice.
Dan and I both really enjoyed the recipe. If you click on the link the creator stated that it was a spicy dish. This is not the case. I did not find it to be spicy at all. But it tasted good. I think it's one that I will definitely make again. Once again I had leftovers to be able to take with me to work. I've been kinda lazy lately with preparing my lunches. It's been nice to be able to take leftovers. It's another vegan recipe too!
I'll end with a photo of my little man. It was rather chilly the other day. I put Isaac in his coat and his cute hat! Dan calls it is "Fargo hat"

ReplyDeleteWe love vegweb! We have found a lot of recipes on there. And they recently redesigned the site too. I like that you can search by a certain ingredient (hopefully you still can with the redesign)
