Recipe: Slow Cook Zesty Black Bean Soup



It's been awhile since i've posted a new recipe. It's not that we haven't been trying new recipes. It's that I'm to lazy to post them.  I found this recipe online. It's by Betty Crocker.  We've tried quite a few crock pot recipes.  They are nice because you can throw everything in and go about your day. Normally I do crockpot recipes during the week but  I felt like making it today so I could have something to take with me to work for lunches.

Ingredients:

1 pound of dry black beans
10 cups of water
8 cups of vegetable broth (I used only 7 because it looked like I was running out of room in the pot)
2 cans of diced tomatoes
2 medium carrots
2 medium onions
2 garlic cloves, minced
1 teaspoon of salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper

Directions:
1. Bring water and beans to boil and reduce heat to a simmer for 10 minutes. Remove from heat, cover and let stand for 1 hr.  (Note: You can if you wish soak the beans overnight. This will allow you to skip this step)

2. Add all ingredients included the beans (drain them) and cook in crockpot for 10-12 hours.

The recipe was easy to make. I mean most crock pot recipes are. The taste was... okay. It wasn't the best soup recipe but it wasn't the worst either. There are lots of leftovers that I can take with me to work this week. Isaac tried some of the beans and carrots. I tried giving him some of the broth and he liked it. He had a little avocado tonight too. We've given him avocado mashed up... tricking him by mixing it with apple sauce. This time we just cut up the avocado. He wasn't a huge fan at first but he ended up liking it in the end.



Isaac does this really cute thing almost every time he eats. Hubby started making the sound whenever Isaac was eating and I think Isaac started mimicking him. Isaac is eating lentil burgers in this video.  They might look like big pieces but they break apart really easily.


We spent the weekend relaxing and didn't do much at all. We had some nasty weather today so we laid low.  I finally heard back from the people helping with the half marathon I want to do in May. I guess they've been having internet issues and they claim they will call once online registration opens up. They stated I can print out a copy and register that way.  But thats to old school.

  1. I love how easy making soup is! I was wondering if you ever make the broth/stock from scratch? I have read that homemade is way more nutritious than what you get from the store.
